Sometimes, the best sensory memories come from the smell of something delicious that you ate as a kid—a family recipe or tradition especially can bring back a comforting memory with every bite.
But sometimes that amazing food you remember can derail your nutrition plan in a big way. Is it possible to add a twist to an old recipe to satisfy your taste bud memory and keep you honest? I think it is!
In this edition of “Have Your Pasta and Eat It, Too,” I want to share a twist on one of my favorite recipes my mom used to make. The original was pasta, feta cheese, garlic, and a little margarine. (Don’t judge, it was like 1970.)
This updated twist keeps the same flavor and texture, but has a friendlier macro profile for you proteiners. (I maybe just made up a word. You’re welcome.) Thanks to edamame noodles, it’s still got that pasta feel, but with more protein and less carbs.
Ingredients
- 2 oz. Seapoint Farms Edamame Fettuccine (I love this brand.)
- 1 oz. Bulgarian Feta, crumbled (I like the Bulgarian because of the bite and texture, but any feta cheese will do.)
- 6 oz. grilled chicken breast (I spice it with McCormick Grilled Steak Spice, but you do you.)
- 1 clove garlic, minced or crushed
Directions
- Prepare the fettuccine as directed on the box. It’s super easy.
- Drain the fettuccine. Toss in crumbled feta cheese. Toss in the garlic.
- Add the grilled chicken.
Sometimes, I add some greek olives and a fresh grape tomato or two. Play around with it! Maybe add some sun-dried tomatoes or chopped onion. (Remember to adjust your macros if you’re tracking.)
How easy is that?
What I Like About This Recipe
- It’s easy to prepare. If I grill some chicken at the beginning of the week, this makes an easy and tasty variation.
- It packs a protein wallop!
- I can make this if I have someone over for dinner and not ever discuss that I am watching my macros.
- This is delicious even when I’m not watching my macros.
